Sticky Toffee Pudding With Toffee Sauce

Ingredients

  • 150g unsalted butter
  • 350g dark brown soft sugar
  • 400g self raising flour
  • 1 tbl spoon golden syrup
  • 2 tbl spoon of black treacle
  • 4 eggs
  • 1 teaspoon of vanilla extract
  • 400g dried dates
  • 1 tbl spoon bicarbonate soda
  • 660ml water

Method of cooking

  • soak dates in water & bring to boil
  • add bicarbonate of soda & allow to cool & drain
  • mix butter, sugar flour syrup, treacle, eggs & extract together & beat for approx 5 minutes
  • pour into grease proof container & bake in oven gas mark 2 or 150oC for 45 minute

Toffee sauce

  • 200g unsalted butter
  • 200g caster sugar
  • 300g dark soft brown sugar
  • 300g golden syrup
  • 820g evaporated milk

Method of cooking

  • mix the syrup, all sugars & butter together in pan on high heat
  • add evaporated milk, blend together for approx 5 minutes & allow to cool
